Servings
Ingredients
6 medium tomatoes , seeded and finely chopped
2 cup low sodium chicken broth
1 tsp cooking sherry
2 tbsp fresh cilantro , chopped
1 tbsp low sodium soy sauce
4 scallions , white part only
1 tbsp fresh ginger root , 4 thin slices
0.25 tsp chili sauce (or Chinese chili sauce)
2 medium limes


Directions
1 In medium saucepan over low heat, add tomatoes, broth, sherry, cilantro, soy sauce, scallions, and ginger.
2 Simmer 20 minutes. Remove from heat and allow to cool.
3 Tranfer soup to food processor or blender and purée until smooth. Chill.
4 Before serving, stir in chili sauce.
5 Grate zest from one lime. Set aside.
6 Squeeze juice from both limes into soup. Stir well.
7 Ladle soup to chilled bowls and garnish with lime zest.
