Servings
Ingredients
6 cup fresh chopped arugula (3 bunches)
2 oz grated Parmesan cheese , fresh
0.5 cup fresh cherry tomatoes , cut in half (about 12 tomatoes)
3 tbsp olive oil
3 tbsp fresh lemon juice
1 pinch black pepper , freshly ground


Directions
1 Wash arugula. Pat dry.
2 Remove and discard stem ends.
3 Put half of cheese in salad bowl. Add cherry tomatoes and arugula. Cover and chill until ready to serve.
4 When ready to serve, whisk olive oil and lemon juice in small bowl.
5 Drizzle over the arugula and toss lightly.
6 Sprinkle with remaining cheese and fresh pepper.
7 Serve immediately.
Additional Information
Mix red pepper flakes and oregano into lemon-oil dressing for a spicier flavor.
