Servings
Ingredients
3 tbsp distilled white vinegar
1 oz black peppercorns
4 fresh artichokes (3 lb)
4 oz firm tofu , drained (or soft silken, equal to 1/2 cup)
2 tbsp fresh lemon juice
2 tsp extra virgin olive oil
0.5 tsp dry mustard
1 pinch salt
1 pinch black pepper , fresh ground
6 cup cold water


Directions
1 Fill large pot halfway with water. Add vinegar and peppercorns. Bring to boil.
2 Slice off bottom stem of artichokes and remove leaves. Cut off 1/2 inch from top of artichokes and 1/4 of each leaf tip.
3 Place artichokes in water, cover pot, reduce heat and simmer 30-35 minutes.
4 Use food processor or blender to purée tofu, lemon juice, oil, and mustard until smooth. Sprinkle with salt and pepper.
5 Arrange artichokes on plate and serve with dipping sauce.
Additional Information
Use a variety of oils and fresh herbs and spices to create different dipping sauces.
