Ingredients
4 Artichokes, globe, medium, fresh
12 oz Tofu, firm, silken, 1" slice
4 tsp fresh mint , minced (or 1-1/4 teaspoons dried mint)
4 tsp fresh lemon juice
1 tbsp olive oil
2.5 tsp honey mustard
1 tsp fresh lemon peel
0.75 tsp salt
0.25 tsp curry powder
0.25 tsp black pepper


Directions
1 Arrange the artichokes upside down in a steamer basket and place in a pot with 1 inch of boiling water.
2 Place lid on pot and steam for 20 to 25 minutes or until soft.
3 Using a food processor or blender, puree tofu, mint, lemon juice, oil, mustard, lemon peel, salt, curry, and pepper until smooth. Serve dressing as a dipping sauce with artichokes.
