Ingredients
4 Artichokes, globe, medium, fresh , trimmed down to the hearts, retaining part of the stalk
8 scallions , cut into 1" pieces
1 medium onions , sliced
4 tsp extra virgin olive oil
1 medium lemons , sliced
1 fresh lemons , juice of
0.5 cup cold water
1 pinch salt
6 tbsp fresh dill weed
1 medium lemons , wedges for garnish


Directions
1 In a large pan, place the artichokes, scallions, onion, oil, lemon, lemon juice and water. Cover and cook over low heat for 35 minutes.
2 Add the salt, most of the dill, reserving some dill for garnish. Baste the artichokes and continue to cook for 20 minutes, or until tender.
3 Allow artichokes to cool, then garnish with the remaining dill. Serve cold with wedges of lemon for garnish.
