Ingredients
15 oz canned artichokes hearts, drained
4 oz cream cheese , softened
0.33 cup grated Parmesan cheese
3 tbsp mayonnaise
1.5 tsp minced garlic , roasted
2 tbsp chopped parsley , finely
1 tsp fresh lemon juice (up to 2 teaspoons)
1 pinch salt , to taste (optional)
1 pinch ground cayenne (red pepper) (to taste)
2 tbsp canned black olives , chopped
2 tbsp chopped red bell peppers , roasted


Directions
1 In a food processor add artichokes, cheeses, mayonnaise, and garlic and process until smooth.
2 Stir in parsley; season to taste with lemon juice, salt, and cayenne pepper.
3 Refrigerate several hours for flavors to blend. Spoon into crock and garnish with olives and red peppers.
Additional Information
This dip is great with assorted raw vegetables and whole grain flatbread.
