Ingredients
1 tbsp olive oil
1 cup fresh chopped onion
1 cup fresh chopped celery
8 oz fennel bulb , chopped
2 medium garlic cloves , thinly sliced
0.5 cup golden raisins
0.33 cup white wine vinegar
3 tbsp sugar
2 tbsp capers
1.5 tsp fresh lemon peel , grated
0.25 tsp salt
0.25 tsp black pepper , freshly ground
15 floz no-salt tomato sauce
9 oz frozen artichokes hearts , thawed and chopped
2 tbsp chopped parsley (flat leaf parsley preferred)


Directions
1 Pour oil in a frying pan and heat over medium-high heat. Saute onion, celery, fennel, and garlic 5 minutes or until light browned. Mix in raisins, vinegar, sugar, capers, lemon rind, salt, pepper, tomato sauce, and artichokes. Let mixture simmer then cook over medium-low heat for 5 minutes or until most of the liquid absorbs. Garnish with fresh parsley.
Additional Information
This is great served chilled or at room temperature spooned onto toasted bread slices.
