Ingredients
15 oz canned artichokes hearts, drained , marinated (equal to 2 jars)
2 tbsp Vinegar, red wine
2 tbsp olive oil
6 fresh plum tomatoes , sliced
16 oz Cheese, mozzarella, fresh, balls, bites, serving , halved and sliced (equal to 2 balls)
2 cup fresh basil , loosely packed


Directions
1 Strain artichokes, saving 1/2 cup of liquid. Slice artichokes in half.
2 Whisk together vinegar, oil, and saved artichoke liquid.
3 Place artichokes, tomatoes, cheese, and basil on a serving platter and drizzle with vinaigrette.
Additional Information
Be sure to use fresh mozzarella, it adds great flavor. Also, any Italian meats, cheeses, and vegetables can be used in this recipe (these are not included in the nutrition facts information).
