1 Using a food processor or blender, puree limeade and tofu until smooth. Blend in water.
2 Spoon mixture into the freezer compartment of an ice cream freezer and prepare following manufacturers directions.
3 Pour mixture into a freezer safe container and freeze at least 2 hours. When ready to serve, decorate with mint and lime rind.
