Directions
1 Mix the yeast in the warm water and let stand 5 minutes.
2 Mix in the salt and 2 1/4 cups of the flour to create a soft dough.
3 Knead dough until smooth on a floured surface adding the remaining 1/4 cup of flour to keep hands from sticking.
4 Coat a bowl with cooking spray and place the dough in it, cover, and let rise for 1 hour in a warm place.
5 After dough has risen punch it down and divide into 4 portions. Form each of the portions into a ball.
6 Coat 2 large baking sheets with cooking spray and roll out each of the balls of dough into 11-inch paper thin ovals on baking sheet.
7 Mix together the egg white with 1 tablespoon of water and brush over the dough.
8 Mix the Parmesan cheese with the sesame and poppy seeds and sprinkle on top of the dough.
9 Bake for 12 minutes at 400 degrees. Dough should be crisp and lightly browned.
10 Cool completely on a rack then break each round into 6 pieces.
