Directions
1 Boil water with salt and oil in a pot. Gradually stir boiling mixture into masa harina in a bowl to form a dough. Cover and let rest 15 minutes.
2 Separate the dough into 12 equal sections. Form each section into a ball using moist hands. Flatten each ball into a 1/2-inch thick patty. Spray each patty with cooking spray on one side.
3 Cook arepas in a cast-iron skillet heated over medium heat, cooking spray side down. Cook 5 minutes per side, using a spatula to flatten. Arepas should be just crispy and golden brown.

These are thick tortilla like breads that can be used for anything from dipping into salsa to being filled with rice and beans.
