Servings
Ingredients
2 cup sugar
750 mL white wine , 1 bottle (Sauvignon Blanc preferred)
12 fresh apricots , quartered and pitted
1 cinnamon sticks
1 vanilla beans , split lengthwise
2 cup vodka


Directions
1 Heat sugar and wine in a large pot for 2 minutes over medium high heat, stirring continually.
2 Mix in apricots, cinnamon, and vanilla. Let mixture boil and cook 30 seconds, slowly stirring after 15.
3 Take pot off of heat and mix in vodka. Let mixture fully cool.
4 Pour mixture into a bowl and cover with cheesecloth or a towel.
5 Place in refrigerator for four days.
6 Strain apricot mixture through a fine colander, saving liquid and apricots.
7 Dispose of cinnamon stick and vanilla. Spoon the liquid into bottles and chill until ready to use.
Additional Information
Serve the marinated apricots as a garish for cakes or pies. The liqueur is perfect as an after-dinner drink or as a sauce for ice cream or pies.
