1 Boil water and sugar in a medium pot over medium high heat, stirring often. Mix in apricots and let boil.
2 Lower heat, place a lid on the pot, and let simmer for 10 minutes, apricots should be soft. 3 Using a food processor or blender puree apricot mixture with vanilla until smooth. Place mixture in refrigerator until chilled.
4 Spoon mixture into the freezer bowl of an ice cream freezer and process following manufacturers directions. Spoon mixture into a freezer safe container and place in freezer for at least 2 hours.
