Ingredients
2.5 cup white all purpose flour
0.75 cup sugar
2 tsp baking soda
1.5 tsp ground cinnamon
0.25 tsp ground nutmeg
0.25 tsp salt
0.75 cup chopped walnuts , finely chopped (or pecans)
2 cup low fat cheddar cheese, shredded
1 cup dried apricot halves , finely chopped
2 raw large eggs
1 cup whole milk
2 oz butter , melted (or margarine)
3 tbsp packed brown sugar


Directions
1 Combine 2 1/2 cups flour, sugar, baking soda, 1 teaspoon cinnamon, nutmeg, and salt. Stir in nuts, cheese, and apricots.
2 Whisk together eggs, milk, and 1/3 cup butter. Stir liquid mixture into flour mixture until a batter forms.
3 Butter and flour two 4 1/2 x 8 1/2 -inch loaf pans; spoon batter into each pan. Mix brown sugar with 1 tablespoon melted butter, and 1/2 teaspoon cinnamon and sprinkle over top of loaves.
4 Bake at 350 degrees F for 30 to 35 minutes or until set.
5 Let cool in pans for 10 minutes; move to racks and let cool further.
