Ingredients
8 oz dried apricot halves
0.25 cup sugar
1 pinch almond extract , drop
1 pinch vegetable oil
1 pinch confectioners sugar


Directions
1 Combine apricots and 1 inch of water in a pot; let boil. Lower heat and simmer 30 minutes or until tender. Strain and place apricots in food processor or blender. Puree apricots until smooth. Spoon mixture back into pot and mix in sugar. Let cook 5 minutes, stirring continually.
2 Take pot off of heat and mix in extract.
3 Coat two foil-lined baking sheets with oil; pour fruit mixture on to baking sheets. Form two even rectangles about 12 by 8 inches big.
4 Bake at 200 degrees Fahrenheit for 2 hours or until dry and brown. Let cool and sprinkle with confectioner's sugar. Remove apricot leather from foil and sprinkle other side with sugar. Slice leather into 1/2 by 8-inch slices and roll up. Store in an airtight container for up to 1 month.


Additional Information
If leather sticks to knife when cutting, let dry 15 to 20 minutes, then continue cutting.
