Ingredients
12 oz dried apricots , coarsely chopped
1.5 cup cider vinegar
1.5 cup sugar
1 cup canned green chile peppers , chopped (or roasted poblano chilies)
0.5 cup dried cherries , chopped
0.5 cup fresh chopped red onion
1 cinnamon sticks
1.5 tsp mustard seed
0.75 tsp salt


Directions
1 Mix apricots, vinegar, sugar, chilies, cherries, red onion, cinnamon, mustard seed, and salt in a pot and heat over high heat.
2 Let mixture boil. Reduce heat to low, place a lid on pot, and simmer 20 to 25 minutes or until apricots are soft. Take lid off and simmer another 5 minutes or until liquid evaporates.
3 Let mixture cool. Take cinnamon sticks out of mixture and serve.
