Ingredients
1 lb chicken tenders (or boneless, skinless chicken breasts)
0.25 cup low sugar orange marmalade
1 tsp cornstarch
0.25 tsp ground ginger
0.5 tsp minced garlic
1 cup unsweetened applesauce
2 tbsp fresh chopped green onion


Directions
1 Preheat oven to 400°F.
2 Wash and dry chicken. If using chicken breasts, cut each breast lengthwise into 4 pieces.
3 Place in single layer in foil-lined 13" x 9" x 2" baking pan. Set aside.
4 In 1-quart saucepan, combine marmalade, cornstarch, ginger, and garlic. Add applesauce.
5 Cook over medium heat, stirring constantly, until mixture starts to boil. Spread evenly over chicken.
6 Bake 20 minutes or until chicken is tender and juices run clear.
7 Garnish with green onions and serve hot, over rice, if desired.
