Ingredients
1.25 cup white all purpose flour
0.5 cup cornmeal
0.33 cup sugar
1 tsp low sodium baking powder
1 tsp ground cinnamon
0.5 tsp baking soda
0.25 tsp salt
0.25 tsp ground ginger
2 large apples , shredded (equal to 1 3/4 cups)
0.75 cup low fat buttermilk
2 tbsp vegetable oil
1 Eggs, large, raw , lightly beaten
1 cooking spray
2 tsp sugar
0.25 tsp ground cinnamon


Directions
1 Preheat oven to 400 degrees F.
2 Mix together flour, cornmeal, 1/3 cup sugar, baking powder, 1 teaspoon cinnamon, baking soda, salt, and ginger. Form a well in the middle of the mixture.
3 Mix together apple, buttermilk, oil, and egg. Stir into the well of flour mixture to make a batter.
4 Spoon batter into a muffin tin coated with cooking spray. Mix together the remaining 2 teaspoons of sugar and 1/4 teaspoon of cinnamon. Sprinkle on top of the muffins.
5 Bake for 20 minutes or until lightly browned. Serve warm.
Additional Information
A cheese grater works great to shred the apples. Serve these warm with apple jelly.
