Ingredients
2 cup Flour, white, unbleached, enriched
4 tsp Baking Powder, double acting
0.5 tsp kosher salt
3 tbsp brown sugar
0.5 tsp ground allspice
0.25 g Cheese, cheddar, mild, reduced fat , grated
2 eggs , lightly beaten, or equivalent egg substitute
1 cup soy milk , or rice or dairy milk
3 tbsp canola oil
0.5 cup unsweetened applesauce


Directions
1 Preheat oven to 400 degrees F. Line a 12-cup muffin pan with paper muffin cups or oil, or spray with cooking spray, set aside.
2 Combine in a large mixing bowl: flour, powder, salt, brown sugar, allspice, and cheese. In a separate bowl, combine remaining ingredients.
3 Make a well in center of dry ingredients; pour in wet ingredients all at once. Blend until combined, leaving no dry spots, do not overmix. Fill muffin cups and bake 20 minutes. Serve warm.

This is a great dinner muffin. Simple to make and fun to eat.
