Ingredients
0.5 cup dried cranberries (sweeetened)
0.75 cup apple juice
0.5 cup red wine (dry)
0.5 cup cranberry juice
3 tbsp Shallots, fresh , minced
1.5 tbsp fresh lemon juice
0.5 tsp salt
0.25 tsp black pepper , freshly ground
1 tbsp walnut oil
10 cup Lettuce, leaf, shredded
3 large apples , cubed
1 small onions , thinly sliced (sweet)


Directions
1 In small pot, over medium heat, add cranberries and apple juice; bring to boil.
2 Remove pot from heat, allow to rest 10 minutes. Strain cranberries, dispose of apple juice. Reserve cranberries.
3 In separate small pot, add wine and cranberry juice; bring to boil. Cook 8 minutes, or until volume reduced to 1/3 cup.
4 In mixing bowl, whisk together wine mixture, shallots, lemon juice, salt, and pepper. Slowly whisk in oil.
5 Mix cranberries, greens, apple, and onion. Drizzle with vinaigrette, top with walnuts, serve warm.

Note that most of apple juice is discarded. This is not noted in nutritional information.
