Ingredients
1 tbsp canola oil
2 large onion , sliced
0.5 tbsp fresh rosemary , chopped (or 1/2 tsp dried)
0.5 tbsp fresh thyme (or 1/2 tsp dried)
2 tbsp oyster sauce
3 medium apples , peeled, cored, and cut into thin slices (Granny Smith or Mutsu)
6 cup low fat unsalted chicken broth
1 pinch salt (optional)
1 pinch black pepper
0.33 cup low fat cheddar cheese, shredded


Directions
1 Heat the oil in a large pot over medium heat. Add onions, rosemary, and thyme.
2 Saute until onions wilt, about 3 minutes, stirring frequently.
3 Mix in the oyster sauce, apples, and broth. Bring to a boil, lower heat, and simmer, partially covered, for 15 minutes. Taste and add salt (if using) and pepper.
4 Ladle hot into soup bowl, sprinkling each portion with some of the cheese. Serve at once.

Oyster sauce can be found in the Asian foods section of most major supermarkets.
