Ingredients
2 medium apples , sliced (choose a tart apple)
1 cup cooked chicken breast, diced
0.5 cup Cheese, cheddar, fat free, shredded
0.5 cup part skim shredded mozzarella
0.5 cup frozen sweet corn kernels , thawed (or fresh kernels)
4 oz fresh tomatoes , chopped (equal to 1/2 cup)
0.5 cup fresh chopped onion
0.25 tsp salt
6 Tortilla, flour , warmed
0.75 cup Lettuce, leaf, shredded
0.75 cup salsa
6 tbsp fat free sour cream


Directions
1 Preheat oven to 400 degrees F. and spray a baking sheet with nonstick cooking spray and set aside.
2 Mix together the apples, chicken, cheeses, corn, tomatoes, onion, and salt. Spoon about 3/4 cup onto half of each tortilla. Fold the other half of the tortilla over and secure with toothpicks. Place on baking sheet and bake for 8 to 10 minutes.
3 Flip tortillas over and bake another 5 to 8 minutes. Remove toothpicks and slice each tortilla into three equal triangles. Serve with lettuce, salsa, and sour cream.
