Ingredients
1 cooking spray
0.5 tsp anise seed
1 cup fresh chopped onion , finely
0.5 cup port wine (or sweet red wine)
0.5 cup pitted dried prunes , chopped
1 tbsp dijon mustard
0.75 tsp salt
0.25 tsp black pepper
2 piece Bread, pumpernickel, regular slice , torn into small pieces
1.5 lb ground pork


Directions
1 Preheat oven to 375 degrees F.
2 Heat a small cooking spray coated pot over medium heat. Saute anise seeds 1 minute, add onions and cook 3 minutes. Mix in wine and prunes and let boil 3 minutes, stirring frequently.
3 Add anise seed mixture, mustard, salt, pepper, and bread to a large bowl and combine well. Let mixture rest until cooled.
4 Combine pork with anise seed mixture and blend well.
5 Arrange mixture in a 9 x 4 inch cooking spray coated loaf pan.
6 Bake 1 hour or until a meat thermometer reads 160 degrees F. Let rest 10 minutes before slicing.
