Homemade bruschetta topped with anchovy, capers, and tomatoes.

Servings

2 oz anchovy fillets , rinsed and drained
2 tsp capers, drained
3 fresh plum tomatoes , seeded and chopped
1 tbsp fresh chopped onion
1 tbsp chopped parsley
0.25 cup Cheese, romano, fresh, grated
6 piece medium slice Italian bread

1 Preheat broiler or toaster oven to 350°F.
2 Drain and pat anchovies dry with paper towel. Chop coarsely.
3 In small bowl, mix anchovies, capers, tomatoes, onion, parsley, and cheese.
4 Place bread on baking tray. Lightly toast in oven, turning once.
5 Spoon topping onto bread. Serve.
