Ingredients
3 cup fresh chopped pears , without skin (use Bosc pears)
0.25 cup amaretto
1 tsp sweetener (sugar substitute) (to taste)
3 oz Cookies, gingersnap, sugar free , crushed into crumbs
3 cup vanilla frozen yogurt, no sugar added , softened
0.5 cup sliced almonds , toasted


Directions
1 Mix together pears, amaretto, and sweetener in a bowl and place in refrigerator, covered for at least 1 hour.
2 Add 1 tablespoon of cookie crumbs to eight, 8-ounce parfait glasses. Spoon 3 tablespoons of pear mixture on top and then 3 tablespoons yogurt. Layer one more time and top with 1 tablespoons almonds.
Additional Information
Freeze the parfait glasses about an hour before using to prevent the yogurt from melting too quickly.
