Ingredients
1 cup sugar
7 oz almond paste
1 tsp amaretto
2 egg whites
0.25 cup turbinado sugar


Directions
1 Preheat oven to 350 degrees F.
2 Using an electric beater, combine sugar and almond paste until paste is in small pieces. Beat in amaretto and egg whites on high until smooth. Wrap batter and place in refrigerator for 20 minutes.
3 Spoon batter onto parchment paper lined baking sheets by rounded tablespoons. Dust each cookie with turbinado sugar. Bake for 10 minutes or until edges are golden. Let cool on pans then move to wire racks.
Additional Information
Be sure not to substitute marzipan for almond paste, as the texture and taste is different.
