Servings
Ingredients
2 cup fresh chopped onion
2 tsp olive oil (or canola oil)
4 medium garlic cloves , minced or pressed
1.5 cup fresh green beans , chopped
4 cup fresh mushroom slices
2 tbsp white wine (dry wine or sherry)
1 tbsp low sodium soy sauce
0.5 tsp ground thyme
2 tbsp whole almonds , toasted
1 egg whites , hard-boiled and chopped


Directions
1 Saute onions in the oil for about 10 minutes, until translucent.
2 Add the garlic, green beans, mushrooms, wine or sherry, soy sauce, and thyme. Cover and cook for 10 minutes then uncover and cook for another 10 to 15 minutes, until the vegetables are soft and most of the liquid has evaporated.
3 In a food processor or by hand, chop the almonds.
4 Combine the chopped nuts, cooked vegetables, and hard boiled egg white in a blender or food processor and puree until well mixed.
