The beverage mix without any sugar or fiber would contain starch. This explains the 27 grams of carbohydrates.
There are many forms of carbohydrates. Keep in mind that some foods may not contain any "added" sugar may still contain naturally occurring sugar.
Food labels can be very confusing. Most people read the front of the package and not the nutrition facts on the back. Never assume that no sugar/no fiber means no carbohydrates. Look further!
