"I've read that "white rye flour bread" is good for diabetics. Other than making it yourself, what 'brand' is available retail? thanks! "

Thanks for asking dLife.

Wholegrain bread is healthful. It is a good source of fiber-rich bran and germ, the outer shell of the grain.

Research shows that bread baked with white rye flour (flour made from the inner, white part of the rye kernel) leads to better insulin and blood glucose levels when compared with wheat bread with rye bran.

White rye flour appears to lead to much better blood glucose values than both regular wheat flour and rye bran. At this time, much of the bread that is sold in stores today is baked with wheat flour and bran from various grains.

I am unable to identify any commercially baked breads prepared with white rye flour. Keep an eye out! Perhaps the impressive research results will convince bakers to bake breads with white rye flour. In the meantime, consumers can use white rye flour in baking their own breads. Yum!
