"I have read that if you eat something sweet that has alot of fat in it it raises blood sugar more. pound cake seems to raise BG several hours later"

I ate pound cake and took insulin to cover it and checked BG before bed and it seemed within range- then I checked Bg again at 2AM and BG was 434 Give myself correction bolus and at 6am BG was still 220. Does it take longer for the sugar to break down in your blood steam when there is also high fat content in a food?

Foods high in both sugars and fat, such as pound cake or pizza, can prolong hyperglycemia (high blood glucose). Frequent fingersticks before and after eating these foods can help you to determine how your blood gucose responds to them.

Each person's blood glucose response will be different. The pattern of blood glucose response also depends on how much of the food was eaten, what other foods were included in the meal or snack, the level of blood glucose control, and individual physical fitness level.

Hi jcoggins, While some carbohydrates break down at different speeds when combined with certain other foods, that is not so much the reason your glucose skyrocketed here. The reason is that pound cake contains vast quantities of carbohydrates. Here's a popular recipe for pound cake: 3 cups cake flour 6 large eggs 1 pound butter 1 pound sugar 2 teaspoons of pure vanilla extract 1/2 teaspoon salt 1/2 cup buttermilk 1/2 teaspoon baking soda 1 teaspoon baking powder 3 cups of flour! 1 pound sugar! 1/2 cup buttermilk (read lactose)! There's very little confusion why your glucose would go to the moon. Let's face it, there are some "foods" that a T2 shouldn't eat. And pound cake is a patent example of one. Eat more real food, not manufactured food. Vegetables, eggs, beans, nuts, meats, and very limited whole fruits. Exercise and get fit. This is the way to long-lasting health.
