In most cases people do not require additional insulin when eating fresh veges, due to their high fiber, low carbohydrate content. A cup or two of carrots could, however, raise your blood glucose, and require use of insulin. Most people do not eat enough fresh vegetables at any given time to cause a noticeable change in blood glucose. The effect is also relative to other variables, such as fresh or raw, foods eaten at the same meal, relative insulinization at time of meal, activity level, etc. Ultimately, the best way to tell if you need insulin is to test in pairs, or use continuous glucose monitoring, to see what is actually happening in your body. The goal is stable blood glucose, and the means is in determining how the foods you eat affect your blood glucose. And remember, every “body” is different. What works for one may not work for all!

I would not count veggies they have such a low impact on bs levels. Now if its carbs well thats a different story.
