Protected Carbohydrates are carbohydrates that normally would be digested but are not digested. A protective barrier was created in the manufacturing of the pasta to reduce the amount of starch digested in the small intestine.
The nutrition label on the pasta is confusing. The Food and Drug Administration (FDA) dictates how nutrition labels are to be written. FDA required the pasta manufacturer to list the total amount of carbohydrate (protected and digestible).
Both Dreamfield and whole wheat pastas are good sources of nutrients and fiber. The carbohydrate in the whole wheat pasta is not protected. The same amount of whole wheat pasta will increase your blood glucose (sugar) more than the one that contains protected carbohydrate.
I recommend that you frequently monitor your blood glucose to determine how your body respond to different foods, with or whitout protected carbohydrate. Continue to count the amount of carbohydrate targeted for each meal or snack to control your blood glucose levels.
