"Can you tell me what a protected carb is? Accrding to Dreamfields pasta it contains 31 gams of it !"

I'm trying to reduce the amount of fat and carbs in my families diet. I have noticed alot of low carb recipes include Dreamfields pasta, which according to them only contains 5g of digestible fiber in a 2 oz serving. Which is more beneficial this or a whole wheat product? My wife and I are both type 2 diabetics losing weight and trying to eat the right stuff.

Protected Carbohydrates are carbohydrates that normally would be digested but are not digested. A protective barrier was created in the manufacturing of the pasta to reduce the amount of starch digested in the small intestine.

The nutrition label on the pasta is confusing. The Food and Drug Administration (FDA) dictates how nutrition labels are to be written. FDA required the pasta manufacturer to list the total amount of carbohydrate (protected and digestible).

Both Dreamfield and whole wheat pastas are good sources of nutrients and fiber. The carbohydrate in the whole wheat pasta is not protected. The same amount of whole wheat pasta will increase your blood glucose (sugar) more than the one that contains protected carbohydrate.

I recommend that you frequently monitor your blood glucose to determine how your body respond to different foods, with or whitout protected carbohydrate. Continue to count the amount of carbohydrate targeted for each meal or snack to control your blood glucose levels.

There are 3 diabetics in my family including myself. We all use Dreamfield's pasta. None of us have had high glucose as a result of using Dreamfields. However, we have found we do have quite a bit of flatulance after eating it.
