Potato slices are soaked in water to remove some of the starch from the cut surface so they don't fry too dark or scorch. It will not remove the starch underneath the surface. It will not remove enough starch to make potato a "low" carbohydrate food.
The carbohydrate in the potato must be counted as part of the total carbohydrate targeted for the meal or snack. Monitor your blood glucose (sugar) levels to see how much the potato influences your blood glucose levels.
