"How do you count carbs when using Dreamfields Pasta? It doesn't impact my bg's as much as regular pasta. Is it different because of net carbs?"

I was seeing a dietician and she has me on 3 carb servings/meal. I wanted to ask her about the question, but she recently passed away - tremendous loss of a great resource and good person!

Hi maferkis! Thanks for asking this and I'm sorry to hear about the loss of a colleague. I don't have a Dreamfield label in front of me. However, I can remember being unsure how the "5 grams of net carbs" were calculated for that product. Foods high in fiber do impact blood glucose levels differently. And we usually advise patients to subract some of the grams of fiber from the total carbohdyrate to determine "net carbs" for that food. Fiber, although considered a carbohydrate, usually causes less dramatic rise in blood glucose levels because it isn’t absorbed in the gastrointestinal tract. Experts estimate that most Americans only consume about half of the recommended amount of fiber. Eating more vegetables and spending your carbohydrates on fiber rich foods such as fruits and whole grains is a great place to start. As you increase the fiber in your diet it is important that you drink plenty of water. I commend you on your active involvement in your diabetes care.
