Fruits and vegetables are great sources of nutrients. When pre-cutted, they are very convenient and readily enjoyed. Their surfaces become exposed to the atmosphere and all passing elements. Their deterioration proceed more quickly than when kept whole. Since some of the vitamins are sensitive to air and heat exposure, some of these nutrients will be lost (but not all).
Whenever able, cut fruits and vegetables just prior to use. Pre-cutted fruits and vegetables should be tightly wrapped or sealed in a food container. They also need to be kept cold/refigerated to retain their nutritive value as well as to delay spoilage. Plan to eat them within 1-2 days after being cutted.
