"I have been diagnosed with Charcot foot in both feet. What kind of exercise or activity can I do with such limited use of my feet?"

Dear FrammaJo; I'm sorry to hear of the limitations/opportunities to identify and participate in activities within the needed parameters. Thank you for asking dLife and I'm a great "FAN" of armchair exercises. I recently borrowed a videotape from my local library called, "Chair Dancing." You checked your heart rate throughout the tape-(fun). But, listening to your body and observing as to avoid any impact to the feet and lower leg areas. I would also suggest a stationary bike, or recumbent bike; as always, check with your PCP"s for "OK". (You may also have some cardiovascular concerns and consult your Cardiologist for "OKs" as well). You might also consult with a physical therapist, specialized trainer to help guide you within your modification needs. The specialist might be able to customize a program specific to you. Weights also help with upper body strength, again specialized for you. Recent recommendation for activity are 150 minutes per week, however, as I mentioned this may be excessive and I defer to your Cardiologist/PCP. Be your best and hope this helps you reach your goals.
