Hello,

Palm sugar was originally made from the sugary sap of the Palmyra palm or the date palm. Now it is also made from the sap of the sago and coconut palms and may be sold as "coconut sugar." The sugar is a golden brown paste, sold in tubes, blocks or tin cans. It may be light-colored or dark, soft and gooey or hard. As a lightly-processed product of cottage industry, it varies greatly from batch to batch. .

I was unable to locate the glycemic index of palm sugar, date palm, or raw sugar from these websites: http://www.glycemicindex.com/ , http://www.nutritiondata.com/

I would suspect that the glycemic index should be similar to table sugar. The best way to determine how these sweeteners influence your blood glucose (sugar) is to do a fingerstick before and one- to two-hours after you eat this food in a meal or snack. This way, you can compare how rapidly your blood glucose rose.

People with diabetes are allowed to have sugar. Keep in mind that it is part of the total carbohydrate targeted for the meal or snack in your meal plan. No meal plan? Talk with a registered dietitian about establishing a meal and exercise plan for controlling your diabetes. You'll learn more about how to read food labels, modify recipes, eating out, etc.

Enjoy!.
