After eating a meal, carbohydrates are converted into glucose which is utilized by the body for energy, or stored in the liver and other tissues for use at a latter time. Glucose uptake and utilization by muscle, fat and liver tissue is regulated by Insulin; but Insulin plays no apparent role in glucose utilization by the brain and kidneys. During the post meal state (4 to 16 hours after food consumption) glucose and fat stores are broken down for use as energy, and Adipocyte Triglycerides begin to break down into free fatty acids for use as an alternative source of energy. The brain, however, depends on glucose exclusively. This inability of the brain to utilize an alternative energy source is the reason we become confused with inability to think clearly when blood glucose levels drop too low to maintain adequate glucose for brain activity.
