Ok so I got this out of a diabetic cook book! I hope this helps the next time you are starving for some homemade cookies! THEY ARE AWESOME!!!
"Valerie's (it was Sara's in the book but who cares right?) Chocolate Chip Cookies
1/4 C light butter-canola oil blend
1/2 C sugar substitute
1/2 C packed brown sugar
1 egg white
1/3 C plain fat free yogurt
1/3 C unsweetened applesauce
1tsp vanilla extract
1 1/4 C all-purpose, unbleached flour
1 C Oat flour ***
1 tsp baking soda
1/2 tsp salt
3/4 C mini semisweet chocolate chips (6oz)
***Oat flour is available at many supermarkets, natural foods stores and on-line. Oat flour can easily be made at home by pulsing old-fashioned rolled oats in a blender or food processor until a flour like consistency is reached.
1. Preheat oven to 350
2. Cream butter blend with sugar sub. and brown sugar. Add egg white, yogurt, applesauce and vanilla. Mix well and set aside.
3. Combine flours, baking soda and salt in mixing bowl. Add to creamed mixture. Mix well. Stir in chocolate chips. Dough can be refrigerated at this point to be baked off later, if desired.
4. To bake, using a tablespoon scoop 1 1/2 Tbs. of dough per cookie spoon on to cookie sheet 2 in apart. Dough balls will remain round. If you prefer a flatter cookie, flatten with a fork. Bake 12-14 min until cookies begin to turn golden on the edges and bottoms. Remove from oven and let cool slightly before removing from baking pan. Cool completely in wire rack and store in airtight container.
Makes 26 (2inch) cookies
1 cookie per serving
Dietary exchanges: 1 starch and 1/2 Fat
Ok so here is the beef....I used Brummel and brown yogurt butter and it worked just fine and i accidentally bought vanilla yogurt instead of plain and they tasted fine and i used regular sized choco chips so don't worry yourself too much over the ingredients. Oh and the oat flour was a snap. i just put some oat meal in the blender and in about 10 pulses i had flour. I also made a little extra so I would have it for when I needed it again. Also, when they say you can refrigerate the dough....that is a WARNING because at one cookie per serving you will definitely eat more than your share if you don't get rid of the dough! Just a little advice...have fun and enjoy!!!

Do you know the exact amount of carbs per serving? I have to count carb grams and need to know the exact number of carb grams to know how much insulin to bolus, when I eat them.

I hear Eat Well Be Well will have sugar-free, no sugar alcohol chocolate chips before the end of May. The company tells me they'll be available from Netrition.com
