Hi, I get up about 3:00 a.m. in the mornings to get ready for work. I always eat breakfast before I leave for work. So I don't have alot of time to fix myself a big breakfast. I'm not supposed to have meat for breakfast. But I can have 2 starches and 1 egg. Does anyone have any ideas? Thanks.
Can you have protein at all? Like peanut or almond butter?
I like whole grain bread with some almond butter on it. Very tasty toasted.
When you say "starches", do you mean carbohydrates? Like, can you have fruit. I also enjoy having some strawberries with my breakfast. If you can have 30 grams of carbs, some whole grain, high fiber fall into that category.
These are things I like, thought it might spark some ideas.

I'm a big fan of applying cream cheese and adding apple slices, banana,or blueberries to Joseph's Lavash wraps. Then I toast it in my toaster oven.I like the blueberries most in flavor and it doesn't raise my bs as much as the others. You can eat some nuts to balance it out.

yes, I think starches are carbohydrates. My doctor put me on an 1800 calorie diet which has a certain amount of meats, fish, cheeses, vegetables, fruits, and good fats to eat during the day for the meals. The 1 egg is protein, so I can probably substitute it for peanut butter or another protein.

How about putting plain yogurt and some fruit, nuts, flax meal in a blender? Maybe boil up a few eggs for protein the night before and eat one in the morning with the shake.

A really nice and quick breakfast. Tomatoes slices seasoned to your liking. (I like to use vinegar with low sodium season salt) with a spoonfull or three of cottage cheese. Sometimes I like it warm so I pan fry each side of the tomatoes with no oils.

I like to make breakfast sandwiches to pop in the microwave. I make as many as 10 at a time and freeze them.
Use whole wheat pita pockets. Allow 1/2 egg to a pita. Scramble egg whites, egg subsitute, or eggs according to your allowances. While scrambling, add goodies like onions, peppers, mushrooms, whatever. I like to season this with Mrs. Dash Original. Low fat cheese can also be mixed in with the scrambled egg mixture. If you use egg whites, you could probably add some seasoned turkey sausage.
Fill the pitas and seal in freezer bags. When ready to use, place on a microwave-safe plate. Dampen a paper towel and place over the pita (pitas can get very hard when nuked. Microwave on high for 1 minute 50 seconds.
Here's a tip when filling the pockets: microwave for 10 seconds to soften the pita; they're easier to fill that way.
By making them ahead, you've got a fast, nutritious breakfast that suits your dietary needs.

My usual, when I'm not excessively cold, is about 6 oz fat-free yogurt with sliced fresh fruit and about 1 T ground flax seed. Depending on my readings and the fruit, sometimes I'll have vanilla yogurt (real sugar or sucralose only) and sometimes I'll have plain. If I'm looking for additional protein, I'll fortify the yogurt either with 1 T nut butter or with about 1/4 serving Aria vanilla protein powder (uses stevia for sweetener). Range is 250-350 calories, 1 protein/dairy, 1-2 fruit servings, possible extra sugars (if I'm using a regular fat-free vanilla instead of plain or no-sugar-added). Blueberries are great because they don't need slicing. Bananas and apples both slice up fairly quickly. Any seasonal fruit will do, depending on your tastes.
Another option I'll have in season is cantaloupe (between a quarter and a half melon, depending on size) with fat-free ricotta cheese. (I choose the store-brand fat-free ricotta simply because it is a lot lower in sodium than ANY cottage cheese.) Usually I'll go for about one and a half package servings of the ricotta to get a reasonable 10 g protein and enough cheese to have with the melon. If I cube up the melon and refrigerate it in portions when I get it, then all I have to do is pull out a container of cubed melon and measure out the ricotta into it.

We bought an Egg Boiler which has made my mornings much easier! You can put the water and eggs into the little container, turn it on and then go take your shower while it makes your eggs! It will keep them warm for you until you are ready to eat. Then all you have to do is pop in your toast while you peel the egg. Grab a yogurt or some fruit and Ta Da! Breakfast!
