Wilted Lettuce Salad

6 servings 1/2 a serving

7 cups Boston or Bibb lettuce, torn into pieces
4 slices turkey bacon
1 tablespoon olive oil
4 tablespoons apple cider vinegar
1 teaspoon sugar
¼ cup fat-free, reduced-sodium chicken broth
¼ teaspoon salt
Dash ground black pepper

1. Place lettuce in a large salad bowl.
2. In a small nonstick sauté pan, cook bacon over medium heat until crisp. Remove bacon from pan and chop into small pieces. Toss bacon with lettuce.
3. In a small bowl, whisk together remaining ingredients. In the bacon skillet, add dressing and bring to a boil. Reduce heat and simmer for 8-10 minutes or until slightly thickened.
4. Pour hot dressing over salad and toss well to coat.

Nutrition Information: 56 Calories, 4g Total Fat, 1g Saturated Fat, 7mg Cholesterol, 237mg Sodium, 3g Total Carbohydrate, 1g Dietary Fiber, 2g Sugars, 2g Protein
