Sometimes I feel like the Grocery gods have it in for me. I go to the store, armed with a list and a meal planned out in my head, only to find they're out of key ingredients. Like the time I had my pregnant heart set on faux-tatoes only to discover they're out of cauliflower. Or when I had to have a pizza and they were out of whole wheat Boboli crusts. And it seems like every other trip they are entirely sold out of my brand of diet root beer.
So it should come as no shock that the day I decide to make a stockpile of black bean soup the store is completely out of black beans. They had every other bean imaginable: kidneys, pintos, canelli, garbanzo, small pink and navy. But no black beans. (READ MORE)

I was reading through the dLife Viewpoints section today and saw a post that really hit home.
It's called "Bested by a Can of Tomato Soup" by Scott Johnson and I think it should be required reading for type 3's and other people without diabetes.
Counting carbs can sometimes be a difficult and maddening situation.
And we do it for virtually every meal every day. I mean, we are supposed to.

On my mom and I's Italian vacation back in May, I discovered a new love: risotto. A delicious Italian rice dish that's full of flavor and tailored to my own tastebuds. On the cruise, I had two types of risotto. My favorite was mushroom and spinach risotto which combines two of my favorite ingredients anyway.
I generally don't choose rice as a side dish or main ingredient. I'm more of a pasta or potato kind of girl. However, I do enjoy a nice dish of brown rice every now and then. So I'm not exactly opposed to rice, but not exactly enthralled at the idea.
So risotto was kind of a shock at how much I do enjoy it. Enough to even take an attempt at cooking it a few nights ago. For a first experience, it turned out pretty good so I thought I'd share the recipe with you.

If I could do one thing the next 3 weeks, it would be a vacation from my type 2 diabetes, weight issues and actually, my health entirely. Even one day seems like it would be divine.
Warning - "food fantasies" follow.
I would eat pastries for breakfast, and have another one or two for a morning coffee break (I do love me some carbs). Perhaps a nice Eggs Benedict. And oh, yes, I would have pumpkin spice lattes until I shook from the caffiene.
I would eat homemade cream of mushroom soup for lunch, or a nice lobster bisque, full of heavy cream. Then I would take a nap, just because I wanted one, not because my blood glucose was at 200.
Homemade cookies with full-sugar cocoa and lots of marshmallows for afternoon snack. (READ MORE)

I interviewed for a preschool teaching position last week. I observed the class and really enjoyed the kids and fellow teachers. It's a part time position that would work great with my own graduate school classes. One of my initial thoughts was that kids are often sick. And kids don't often remain aware of germs.
The preschool takes precautions with specific things. Hand washing after being on the playground. Handwashing before and after meals. Clean systems in place for other things. But there is still that constant interaction with the kiddos as they have runny noses, coughing without covering, sneezing. And that's just colds.

I modified a recipe from the Hungry Girl website for a low sugar eggnog and found it very acceptable. It has nearly the same taste and mouth feel as the lite eggnog I've been drinking. It may be a bit late for this year's holiday season, but there's still New Year's.
The original recipe is here. My version is below.
6 C 1% milk 1 Tbsp vanilla extract 1 small (4-serving) package Jell-O Sugar Free Fat Free Instant Pudding mix, Vanilla 6 no-calorie sweetener packets (like Splenda) 1 tsp Mace (or nutmeg) (optional) 6 oz dark rum or 1 tsp rum extract (READ MORE)

My recent bout of stomach troubles brought on a strange appetite. For several days, I didn't really want to eat at all. Foods made me cringe at the thought. TV commercials featuring meats and sweets and cheeses sent my stomach into turmoil. But when I started to recover from the worst part of it, my appetite didn't return the way that it usually does.
I typically have an iron stomach. I don't get tummy troubles. Nausea on occasion but only relating to hormones or stress. But never an inability to eat. Or to eat my favorite foods.
But Monday through Wednesday, I was experiencing just that. I munched on Ritz crackers, Coke, and applesauce. I tried a basic meal at Chick-fil-a and tomato soup and a grilled cheese for dinner one night. Yet my stomach was still tossing and turning.

I really don’t try to incorporate diabetes into every facet of life. Really, I don’t.
It just happens.
Take Maeve’s homework assignment last night. Her assignment was to “bridge” or connect the story she was reading to something she could relate to in her own life.

When I was a teenager, I spent a lot of time with my aunt and uncle. Both my parents were working full time jobs with a long commute. My brothers had their own social life. So I spent my free time watching movies, riding around the neighborhood, and enjoying the company of my closest aunt and uncle.
There are a lot of things that I remember about those days. Great conversations at the dining table with my aunt about my family, its history, and my dreams. My uncle taking care of me when I sprained my ankle. And meals. A big part of our time together included meals made together.
My favorite was Shepherd's Pie, which my aunt would make fairly often because it was one of my favorite dishes at their house. Tonight, I'm making my first ever Shepherd's Pie for Marvin and I. I wanted to share the recipe with you guys since it's really one of my all time favorite dishes.

Today is the day for the letter "B."
Future posts featuring letters of the alphabet are forthcoming. Thanks to a suggestion from a comment on my previous post, I'm asking you, the reader, to help me decide what C, D, E, etc. will stand for. What would you like to read about?
There are so many Bs in the life of a pumping diabetic. B for blood sugar, bolus, basal. Today, though, B is for Basketcase. Did you ever have a blood sugar reading that left you emotional? A reading that left you confused? Afraid? Lost? A reading that left you feeling like a total basketcase? I'm sure you've gathered by now that I have. (READ MORE)
