Nope. I'm not talking about eggplant rollatini. Not talkin' spaghetti and meatballs.

 

I love me some Italian ice.

 

39g of carbs, 32g of sugars, corn syrup and artificial flavor. It's everything that should terrify a parent of a child with diabetes. Yet time and time and time again, Italian ice does diddly squat to Charlie's blood sugar. It just doesn't make sense. The 6-ounce cup of sweet, sticky ice is a freak of nature.

 

Since Charlie typically eats Italian ice while at the pool, I thought maybe the blood sugars were offset by swimming, which tends to decrease his levels.

 

Not the case. Susanne bought some Luigi's Italian Ice for the house and we've noticed the same befuddling effect at home. I still cringe when he flips that syrupy chunk of blue or red ice over and chips away at it until it's a drinkable shot of sugar. Waiting for the other shoe to drop, I guess. But it's hard not to believe in this magical Italian ice mystery. Going forward, I'm thinking morning snack - blue raspberry, lunch - watermelon, afternoon snack - cherry, dinner - lemon and dessert - mango. Every day. His lips will be perpetually multi-colored and his A1c will be out of this world. Why rock the boat? We're freakin' on to something!

 

Not only does Italian ice do very little to Charlie's blood sugar, we actually find that in eight out of 10 times, he actually goes low two or so hours later. It's like a little, flavored spinning class in a cup. It's Bizarro World. Italian ice is almost like a free food for us. It's like Jell-O's much cooler cousin (no pun intended). 

 

Susanne tried something different today, bolusing for only 20 of the 39 carbs. Two-and-a-half hours later, his blood sugar was molto perfetto!

lol - we have the same "problem" with pasta. No matter how high he is (and last night he was 250 something before dinner) he always goes low after pasta. 2 hours after a 93-carb bowl of spaghetti and sauce, he was 108 - and we only dosed for 80 carbs. Pasta - the miracle food, cure your diabetes today!
