I love eggnog. Just adore it, and the fact that it's only available 6 weeks a year only adds to its allure.

The full fat full sugar, richest, yummiest version has about 60 calories an ounce. That's without the rum or the bourbon.

Even the "light" version has 26 grams of carbs in 4 ounces, 25 of them from sugars. As usual the light refers to low fat, not low carb.

I've looked around for a healthier recipe. There are a lot out there. Let me eliminate about 60% of the recipes by saying I don't want soy milk in mine. I know, I know, soy milk is so yummy and healthy and yada, yada, yada, but I just don't like it.

I saw a couple recipes that use sugar free vanilla pudding in lieu of eggs and cream to thicken. I'm going to try that one.

I saw another recipe that uses skim evaporated milk and I think I might try that with the pudding, kind of combine the recipes. Most recipes use egg substitute for the eggs, which eliminates the risk of salmonella. You can cook the eggs in some milk to remove that risk also, but who needs the calories in all those yolks?

I found what looked like a great, easy recipe in the dLife Type 2 Clubhouse forum last week but now I can't find it!

A lot of the recipes I saw use fat-free coffee creamer but that doesn't work for us as that stuff is full of carbs.

This one only has 7 grams of carbs in a half cup (without the sherry, of course).

2 cups fat-free milk or soy milk
¼ cup egg substitute - not raw eggs
1 ½ teaspoon vanilla extract
2 teaspoon sugar substitute
Nutmeg or pumpkin spice to taste
¼ cup sherry (optional)

Do any of you out there have a diabetes-friendly recipe you like? Or do you just bite the bullet, bolus and have a serving or 2 over the holidays?
