Ingredients | Makes Servings
6 reduced fat margarine (80%)
2 oz sweetener (sugar substitute) (equal to 1/4 cup sugar)
1 raw egg yolks
0.5 tsp almond extract
0.25 tsp vanilla extract
0.5 tsp fresh lemon peel, grated
1 cup white all purpose flour
0.5 tsp baking powder
0.12 tsp salt

Directions
1 In a medium bowl, cream together the margarine and sugar substitute by beating at medium speed with an electric mixer until light and fluffy. Add the egg yolk and remaining flavorings and continue to beat well.
2 Combine the dry ingredients together and then add them to the mixture. Beat well.
3 Preheat your oven to 350 degrees F and then shape the dough into 1-inch balls. Place the dough balls 2 inches apart on ungreased baking sheets.
4 Bake for 15 minutes, or until the edges begin to brown.
5 Remove the cookies and place on wire racks to cool completely.

  Additional Information
Before baking, try flattening each dough ball with a fork for more uniform, shaped cookies.
