Ingredients | Makes Servings
1 small onions , sliced thin
1 tsp olive oil
0.5 tsp dried rosemary
1 medium garlic cloves , sliced thin
1 medium oranges , 1 piece of peel, 1 1/2 "
0.75 cup canned unsalted diced tomatoes , do not drain
1 tsp capers
2 tsp orange juice
0.12 tsp black pepper , freshly ground
8 oz Fish, halibut, smoked (2-4oz fillets)
0.33 oz pitted calamata olives , 2 teaspoons chopped

Directions
1 Preheat oven to 400 degrees F.
2 Mix the onion, olive oil, 1/4 teaspoon rosemary, garlic, and orange peel in a 13 x 9 inch baking dish.
3 Bake, uncovered for 10 minutes or until onion begins to brown, stir once.
4 Add in the tomatoes and capers, bake 5 more minutes or until it thickens.
5 Add in orange juice, peppers, and place the fish on top. Sprinkle the remaining 1/4 teaspoon of rosemary on top.
6 Spoon some of the tomato mixture on top of the fish so it does not dry out and bake until fish flakes easily with a fork, about 10 minutes.
7 Take out the orange peels and throw out. Sprinkle with the olives and serve.

  Additional Information
Great sides to serve with this dish are green beans and roasted red potatoes, neither of these items have been included in the nutritional analysis.
