Ingredients | Makes Servings
2 boneless skinless chicken breasts
4 Celery, stalk, fresh, medium, chopped
1 large red bell peppers, diced
0.5 red onion, diced
8.75 oz Corn, white, sweet, canned, drained (or yellow corn)
0.25 cup Sauce, barbecue
2 tbsp fat free mayonnaise

Directions
1 Preheat grill for high heat.
2 Lightly oil grate. Grill chicken 10 minutes on each side, or until juices run clear.
3 Remove from heat, cool, and cube.
4 In a large bowl, toss the chicken, celery, red bell pepper, onion, and corn.
5 In a small bowl, mix the barbeque sauce and mayonnaise. Pour over the chicken and veggies.
6 Stir, and chill until ready to serve.

  Additional Information
A great way to use chicken leftovers. Serve on a bed of fresh greens.
