Ingredients | Makes Servings
1 tsp extra virgin olive oil
1 medium onions , chopped
2 medium garlic cloves , minced
0.75 cup Rice, white, glutinous, dry
1.5 cup low sodium vegetable broth
1 tsp ground cumin
0.25 tsp ground cayenne pepper
3.5 cup Beans, black, unsalted, fat free, canned , drained

Directions
1 In a stockpot over medium-high heat, heat the oil. Add the onion and garlic and sauté for 4 minutes. Add the rice and sauté for 2 minutes.
2 Add the vegetable broth, bring to a boil, cover and lower the heat and cook for 20 minutes. Add the spices and black beans.

  Additional Information
Add some diced tomatoes and cilantro, and you have an excellent side dish or even a meal in itself.
