Ingredients | Makes Servings
4 oz Lunchmeat, ham, cooked, deli meat, cut into thin strips
4 piece Onion, white, fresh, slices, thin, separated into rings
1.5 cup Asparagus, fresh, in 3/4-inch pieces
4 Bread, pita, whole wheat, large, 6 1/2"
8 oz goat cheese
2 tbsp Cheese, parmesan, shredded
1 olive oil cooking spray

Directions
1 Preheat oven to 400 degrees F.
2 Spray the olive oil cooking spray on a large nonstick skillet. Add the ham, onion, and asparagus and cook for several minutes, stirring frequently, until the asparagus is crisp-tender and the ham is beginning to brown. If the skillet becomes too dry, place a lid over the skillet periodically.
3 Spread each pita with a quarter of the farmer or goat cheese. Top each with a quarter of the asparagus mixture and 1 1/2 teaspoons of the Parmesan cheese. Spray the top of each tart with a light coating of cooking spray.
4 Bake on a baking sheet for 10 minutes until the cheese is melted and the tarts are just beginning to brown.
5 Cut each into 6 wedges and serve hot.

  Additional Information
Placing a lid periodically over the skillet will allow the steam released during cooking to moisten the skillet.
