Ingredients | Makes Servings
1 lb Beans, great northern, mature , dry
2 cup water , cold (or as needed to cover beans)
4 oz Pork, ham, whole, roasted, diced , bone, and skin removed
1 cup fresh chopped onion
6 oz tomato paste
1.5 tsp salt
2 tbsp yellow mustard  (Westbrae Natural)
0.75 cup brown sugar substitute, granulated  (SugarTwin)

Directions
1 Preheat oven to 325 degrees F.
2 Wash beans.
3 Add cold water to cover beans and bring to a boil. Simmer for 5 minutes.
4 Remove from heat and let stand for 2 to 3 hours.
5 Drain well.
6 Cover again with cold water to 1/2 inch over the top of the beans.
7 Bring to a boil, reduce heat, cover, and let simmer for about 2 1/2 hours.
8 Mix beans with the remaining ingredients.
9 Put in a shallow baking dish and bake uncovered for 2 to 3 hours, stirring every hour.
10 Serve hot or cold!
